BEV'S Quick rise HONEY BREAD
6 cups All purpose flour  (although it ends up being about 8 cups when you add more to knead the bread!)
3 tbsp of raw honey
2 tsp salt
2 Tbsp /little packets of dry active yeast
2 cups water
1/2 cup milk
3 Tbsp olive oil
1/ 4 cup of raw wheat germ
Set aside 1 cup of the flour you are going to use. In a large bowl mix together remaining flour, salt and yeast. In a medium pan, on medium heat, stir together milk, water, honey and olive oil until hot to the touch - 125 F. Stir hot liquids into dry mixture. Then mix in the reserved flour to make a soft dough that does not stick to the sides of the bowl.
Turn out onto clean, floured counter or board, and knead until smooth and elastic about 8-10 minutes. Place in a bowl and cover and let rest for 10 minutes. Cut dough in half and shape into loaves. Place in 2 greased 9 x 5 loaf pans. Cover and let rise in a warm place (I use the oven) until double in size about 50 minutes.
Bake at 400 f for 30 minutes. Remove from pans and place on racks to cool.  YUMMY!!
