Pork and Tater Pie / Grandma Betty Johnson
(Grandma Betty was our step mom)
9 inch unbaked pie shell
1lb pork sausage
1/4 cup chopped onion
1 can cream of potato soup
1/2 cup milk
10 oz frozen mixed vegtables, thawed
1/4 cup dry bread crumbs
1/4 cup grated parmesan cheese

Saute sausage and onioon in skillet until well browned.  Drain off excess fat.  Stir in soup, milk and mixed vegtables.
Cover and simmer 5 minutes.  Pour into unbaked pie shell.  Combine dry bread crumbs and parmesan cheese, sprinkle over top.
Bake at 425 degrees  25-30 minutes.   4-6 servings.

Can be made ahead, do not add crumb topping until just before baking.
