Bev's Jammy THUMBPRINT COOKIES
1/2 c shortening
1/2 c packed brown sugar
1 egg separated
1/2 tsp vanilla
1 c all purpose flour
1/4 tsp salt
3/4 c finely chopped walnuts
Jam or Jelly
Heat oven to 350 f.  Mix shortening, sugar, egg yolk, and vanilla thoroughly.
Sift flour and blend with salt.  Stir into mixture. Roll dough into balls about
1-1/2" big. Beat egg white lightly with a fork till it froths, and then dip each
cookie ball into it.  Now, place walnuts into a ziplock bag and smash them!
Gently place each cookie ball into the bag and coat with walnuts. Take out,
place on cookie sheet and stick thumb into center on each ball.  (This is a
good job for little ones too!)
Bake your cookies, about 1" apart on cookie sheet.  Bake for 10-12 minutes.
Cool.  Use a teaspoon to fill the thumbprint hole in each cookie.  Makes about
3-4 dozen cookies! Yummy!
