Blueberry Oat Muffins
1 c flour
1 c quick oats
1/2 c sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 egg whites
1/2 c water
1/3 c vegetable oil
1 c. frozen or fresh blueberries

2 tbsp sugar
1/4 tsp cinnamon
In a bowl combine first 6 ingredients. In another bowl, beat egg whites, water and oil.  Stir into dry ingreds just till moistened.  Fold in blueberries, gently. Fill muffin cups 3/4 full. Combine sugar and cinnamon; sprinkle over muffins and back at 400 degrees for 18-22 mins.
