Bev's Most Delish Bread
6 1/2 cups unbleached white flour
1 1/2 cups wheat flour
1/2 cup Raw Sugar
1/4 cup honey, and dollop of molasses
3 - 4 TBsp yeast
1 stick (1/2 cup) butter- softened
1/8 cup olive oil
1 1/2 cup warm water - about 110 F
2 tsp salt
2 eggs
Combine dry ingredients in a large bowl and mix thoroughly. Mix
in eggs and butter. Add water and oil mixing with hands as you
go. Keep kneading till dough is smooth and elastic. Takes a good
5 minutes of pounding, kneading and rolling with hands. (This is
the fun part!) Place the dough back in bowl that has a squirt of
olive oil in it. I roll the dough over once to grease it.
Let sit in bowl for about 10 minutes.
I now take it out of the bowl, and punch it thoroughly (I told you this
was FUN!) and then cut off several loaves and shape into greased loaf
shapes. I get 2 regular sized loaves and 2 small loaf pan loaves (to
give to friends) out of this dough.
Place in a warm place with a damp towel over the loaves and let them
rise until double in size. Bake at 375 F till golden brown...
about 40 minutes. Eat with butter and jam!
