GINGER COOKIES FOR CHRISTMAS
3/4 c. butter, softened
1 1/4 c. honey
2 eggs, beaten
1/4 cup molasses
2 tsp vinegar
3 3/4 c whole wheat flour
1 1/2 tsp soda
4 tsp ground ginger
1/2 tsp cinnamon
1/2 cloves
Cream butter and honey together. Stir in eggs, molasses and vinegar.
Sift and dry ingredients and spices. Drop by teaspoonfuls onto
greased cookie sheets. Flatten by dipping a glass into water and
pressing cookie flat. Bake them at 300 F for 15-20 mins, depending on
how hard you want the cookie. Makes about 4 dozen cookies.



COCONUT DROP CHRISTMAS COOKIES
1c softened butter
1 egg
1/3 c honey
2 TBsp vanilla
1/4 tsp salt
1 1/2 c whole wheat flour
1 1/2 c UNsweetened shreaded coconut
Mix butter and honey together. Mix egg, vanilla and salt. Add flour
in 4 parts, mixing well after each addition. Drop by teaspoonfuls onto
ungreased baking sheets. Flatten with floured bottom of a glass.
Kaje at 375 F about 10 mins or till lightly browned around edges,
Makes almost 5 doz cookies!



CHEESE CAKE COOKIES
1/4 lb butter
4 oz cream cheese
3 TBsp honey
1 c sifted whole wheat flour
Combine all the ingredients and mix well. Place a small ball of dough
on a cookie sheet and press flat with a glass (dip glass in water
first). Bake at 350 for 7-10 mins. After cooled place a fresh
strawberry on the top of each. You can top it with whipped cream.
